Monster Cookies.....


 
These cookies are SOOO delicious! I used to make them when my kids were little, but somewhere over the years I stopped. I always called them Cowboy Cookies, but on Saturday I was watching an episode of Pioneer Woman, and she was making almost the exact same cookie, only she called them Monster Cookies. I guess that's what kinda jogged my memory a bit and made me want to start making these again. It's the perfect time of year, too!

 
Here's my recipe, but I'm using the Pioneer Woman's cookie name....

Ingredients


  • 2 sticks (1/2 pound) butter, softened
  • 1 1/2 cups brown sugar, packed
  • 1/2 cup white sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 1/2 cup oats (either quick or regular)
  • 1 cup M&M's, (I like to use peanut butter M&M's)
  • 3/4 cup milk chocolate chips
  • 1/2 cup shredded coconut
  • 1/2 cup walnuts or pecans, chopped
  • 2 1/4 cups Rice Krispies or Cocoa Krispies cereal

Directions

Preheat the oven to 375 degrees F.
Cream the butter with both sugars in a mixing bowl until fluffy. Add the eggs one at a time, beating well after adding each. Add the vanilla and beat again.
 
Combine the flour, salt, baking powder, baking soda and cinnamon . Add to the mixing bowl and mix until combined. After that, add in the oats, M&M's, chocolate chips, coconut and walnuts or pecans. Add the cereal at the very end, mixing until just combined. Do not over mix!
 
Use a 2 1/2 inch ice cream scoop to scoop balls of dough onto a cookie sheet. I do 6 per sheet. They are big and they will spread. Bake until golden brown, about 12-15 minutes, and then allow to cool on a rack.
 
 
Don't these just make you want to make some right now? They are soft and chewey and oh, so perfect with a hot cup of tea!

    1. Oh, Susannah...what a fun recipe this would be to bake with your granddaughter! I bake with mine too. Isn't it fun! I never had a daughter, only 3 sons, so what a change for me. Our middle son just let us know that they will be blessing us with a new grandbaby in June. We're pretty excited!
      A lot of stuff going on in my life right now. God will see us through...He always does.

  3. Ok, Julie.. Where do you find Pioneer Woman? I have not heard of it before but sounds like my kind of entertainment.. Is she the blog Pioneer woman?
    The cookies looks delicious and I must make them for our grandsons sometime..

    1. She is on Food Network Saturday mornings and Sunday afternoons. She is the same one with the blog. Her name is Ree Drummond. If you get that channel, you'll have to watch her sometime. My husband and I watch her every Saturday morning together. I'd love to hear if you or anyone else makes the cookies!
