August Keeper's Meeting...

We had our monthly Keeper's of the Home meeting last night and it went great! So well, in fact, that I forgot all about taking pictures! OOPS! I guess I'll have to do better next month.

Last night Janice and I split everyone into 2 groups. We had 14 ladies in all. Janice showed everyone how to make and can homemade dill pickles, and I demonstrated how to make your own homemade household cleaners. We all learned a lot and had so much fun!

For a sweet little snack, I made some homemade peachy
oatmeal squares and some applesauce cake. Everyone loved them, so I thought I would post one of the recipes for you.


Peachy Oatmeal Squares

Crumb Mixture:
1 1/2 cups flour
1 cup quick oats
1/2 cup brown sugar
1 1/2 sticks melted butter
1/2 tsp. baking soda
2 tsp. almond extract
coconut (optional)

Filling:
3/4 cup peach preserves, (or any other kind you like)

Preheat your oven to 350*.
Combine all crumb mixture ingredients in a large bowl. Mix till crumbly. Reserve 3/4 cup of the mixture for topping. Press remaining mixture into bottom of a greased 9" x 9" baking pan.
Spread preserves to within 1/2 inch of edge. Cover with remaining crumb mix. Sprinkle top with coconut if desired.
Bake for 22-25 minutes. Let cool 10 minutes before serving.


Don't they look delicious? I can't wait for you to try them. They're great in the evening with a hot cup of tea. I'll be enjoying one later this evening while my husband watch's his ball game.

  1. Julie: I forgot to take pictures too. It was a really fun meeting, I'm glad we started having them. Also Thank you again for the peaches. I've got a big box of blueberries coming this weekend, guess I will be busy come Monday.
